Soft and smooth soba noodles with cool watermelon, it sounds like a wacky recipe. Give it a go, and you won’t regret it. It can do double duty as a filling meal or a snack in summer. Steps
| Cut the watermelon in horizontal half. Scoop out the flesh and grind with 1/2 teaspoon of lemon juice, 3 tablespoons of white sugar, salt and chili in the grinder. |
| Cook soba noodle, rinse it with cold water and let it drain all the water.
Cut cucumber into small pieces.
Boil the chicken egg. |
| As the egg is now cooked, peel the shell and cut in a half.
Pour the already ground mixture onto the watermelon. Then place soba noodle into the watermelon "bowl".
Next, add pieces of cucumber, dry seaweed, and a half of boiled chicken egg onto the soba noodle. Sprinkle white sesame on it and we now have a finished watermelon soba noodle. |
