First, clean all beef bones. Boil in a large pot of 2l water with 30ml wine, 30g sliced ginger in 10 minutes in order to make sure that bones are clear and wash again.
Next, stew the bones in a large pot of 3l water in 2 hours. Remember to skim the layer on the surface of the pot so the broth is very clear. When finished with the broth, get rid of the bones and keep the broth.

Heat 10g the mixture of Pho spice including anise, clove, cinnamon, chan pei, and put them in a small cloth bag.
Char 2 shallots, 5g ginger, 1 onion. Next, put the bag with the spice inside and the grilled ingredients into the broth pot.

After 20 minutes, take the bag of spice out. Add 15g salt, 15g seasoning, 30g sugar into the pot.

Now, put the dried rice noodles into boiling water, then put into a bowl.
Add sirloin steak, sliced onion, green onion, and meatballs.
