Mince garlic and chili finely.
Prepare a large bowl, put all the ingredients including pineapple juice, water, vegan fish sauce, lemon juices, and chopped chili and garlic into the bowl and stir.

Slice cucumber, red and yellow bell peppers, purple cabbage, and carrot in thin and long cuts.

Prepare a bowl of cooled boiled water. Before rolling, dip the rice paper into the bowl so that it gets wet and then spread it out on a clean face or large plate.
Next, put the prepared vegetables in turn on the rice paper, and the last is vermicelli. Then fold the right and the left sides of the rice paper, and roll tightly.
