Cook the vegan broth: cut 50 grams of carrot, onion, and celery into small pieces. Remove the stem of Lingzhi mushroom and Chinese black mushroom. Then soak these mushrooms into the mixture of water and salt.


Pour 2 tablespoons of olive oil in a large pot, add the cut vegetables at step 1 together with 2 bay leaves and 6 thymes. Stir-fry them in 5 minutes and then pour 1.5 liters of water into the pot and stew the mixture in 1 hour. After that, take the vegetables out, and we use only the broth.


Boil the broth and add 15 grams of vegan seasoning, 15 milliliters of soy sauce, 5 grams of chili powder, and 3 grams of pepper.


Cut 50 grams of carrot into small pieces and add them into the pot. Next, add Lingzhi mushroom, Chinese black mushroom, and peas into the pot and stew until it is cooked. Turn off the gas stove. For Udon noodles, we cook them and set them aside.


Place Udon noodles into the bowl and add broth and the stewed vegetables onto the noodles.
