Wash tomato, bell pepper, peas and onion; then cut them into small cubic pieces.
Next, heat up 2 tablespoons of cooking oil in a pan and add onion and tomato into the pan to stir-fry in 2-3 minutes. As the veggies starts to get soften, add red curry and stir the mixture in 1 more minute.

Pour coconut milk and vegetable broth into the pan. When the mixture starts to simmer, add fried tofu into the pan, then cook them with a small fire in 10 minutes. Add bell pepper and peas and cook in 3-4 more minutes. Finally, add salt and stir until the salt dissolves (1-2 minutes), then turn off the gas stove.

When it is still hot, take the dish out and have it served with rice.
