Wash the catfish and then cut them into 3-centimeter-slices. Next, wash them carefully again and dry them with paper towels. Then, heat up a little amount of oil in the pan and fry basil leaves until they become crispy. Also, place the fired basil leaves on a paper towel to drain the oil.

Add more oil to heat up and then deep-fry the catfish over the medium-high heat until it's appearance becomes golden and crispy. Set it aside.

Leave only a little amount of oil in the pan and add red chili paste to stir-fry it quickly.

Pour about 1/4 cup of water into the pan and stir them quickly until it forms a thick sauce.
