Peel ginger (use a metal spoon to scrape it), and mince it. Mince spring onions and put them to the side.
Put chopped ginger into a bowl, add 1 tablespoon of vinegar, 1 tablespoon of soy sauce, and 1/3 of a teaspoon of salt and mix them well.
Steam salted egg and then smash it. Separate the egg yolk and the egg white of the chicken egg. Then, add the minced salt egg into the bowl of the egg yolk and mix them well.

Finally, add 2 bowls of cooked rice into the pan and stir. Pour the mixture of ginger and vinegar at step 1 into the pan to stir.
Continue to fry within 3 minutes and then add the left of chopped green onion into the pan to stir. Make sure the rice is not curdled, then off the heat.
Take the fried rice into a bowl and enjoy.
