Steps
| Peel ginger (use a metal spoon to scrape it), and mince it. Mince spring onions and put them to the side.
Put chopped ginger into a bowl, add 1 tablespoon of vinegar, 1 tablespoon of soy sauce, and 1/3 of a teaspoon of salt and mix them well. |
| Steam salted egg and then smash it. Separate the egg yolk and the egg white of the chicken egg. Then, add the minced salt egg into the bowl of the egg yolk and mix them well. |
| Heat up 15 milliliters of cooking oil and pour the egg white into the pan to fry. Next, use a spoon to cut the fried egg white right on the pan. |
| Then, add 30 milliliters more of cooking oil and add the mixture of the egg yolk and the salt egg to fry. Stir them until they are cooked and then add the fried egg white and 10 grams of chopped green onion to stir within 20 seconds. |
| Finally, add 2 bowls of cooked rice into the pan and stir. Pour the mixture of ginger and vinegar at step 1 into the pan to stir.
Continue to fry within 3 minutes and then add the left of chopped green onion into the pan to stir. Make sure the rice is not curdled, then off the heat. |
| Take the fried rice into a bowl and enjoy. |
