Laska Lodesh for a convinient dinner

Ingredients

50 grams dancing chef laksa paste
1/2 of a carrot cut into wedges
50 grams cabbage sliced
40 grams french beans
4 pcs fried beancurd cut into halves
7 pcs thick galangal slices
3 shallots cut into halves
1 pc lemongrass cut into sections
2 red chilies cut into thick slices
1 tbsp sambal dried shrimp
250 ml cold water
80 ml coconut milk
1/2 tsp dried shrimp grind toasted
1 tsp salt
2 tsp cooking oil

Directions

Laska Lodesh is a modified dish of Tempeh Laska Lodesh, which takes advantages of the left food from the previous meal. In addition, this dish is really fragrant because it is comprised of lots of curry vegetables, making it a great meatless meal for a healthy dinner. We can make use of the left vegetables from the last meal or add new ones, whichever we like. Let’s try!

Cut away two heads of the french beans and cut them into halves. Heat up cooking oil and stir-fry them well until they are cooked. Take them out and set aside.

In another pan, heat up 1 tbsp of oil and then add shallots, garlics, galangal slices, carrots and lemongrass. Stir fry them for a minute.

Add sambal dried shrimp to stir-fry them well. After that, add Dancing chef Laksa paste and continue to stir-fry them.

Next, add the cabbages and french beans to cook them finely. Also, pour water and cook over low heat to simmer the vegetables untill they turn tender for about 20 minutes.

Pour coconut milk and then add fried beancurd and chilies slices.

Add salt to make them tasty. Finally, turn off the flame and add the grind toasted dried shrimps. Stir the mixture well.
