750 ml soup from seaweed and anchovy
1/2 tablespoon Korean chili sauce
65 ml Kimchi juice
1 tablespoon sugar
2 leaves bay leaves
1.5 l water

Preparation

Soak the pork ribs in cold water for 20 minutes to get rid of any meat odor and wash out any of the blood. Meanwhile, prepare the vegetables and kimchi. Cut the onion and scallion into small slices.

First, boil the ribs: Place ribs in a pot and fill with 1.5 liters of water, 1 tsp black soybean sauce, then turn on the heat. Add bay leaves, chopped garlic, chopped scallion and simmer for 30 minutes. Then pick up the ribs out.

Once the first boiling batch is done, put the boiled pork ribs, kimchi, 750 ml soup from seaweed and anchovy, 65 ml kimchi water, 1 tsp chili powder, 1/2 tsp Korean chili sauce, 2 tsp mirin, 1 tsp sugar, garlic, and pepper into a pot. Boil on medium-high heat for 20 minutes. Then put more slices of onion, chili and braise for 5 minutes.
