Wash eggplants and cut them into long pieces as shown in the pictures. Also, cut the onion into thin pieces. Next, heat up cooking oil in a pan and stir-fry eggplants pieces until they become soft. Take them out.

Stir-fry garlic and then add chili to stir-fry. Then, add minced pork and stir-fry them well.

When the mixture is almost cooked, add eggplants, soy sauce, sugar, salt, and a bowl of water into the pan to stir-fry. When the sauce boils, cook them in 3 more minutes and then turn off the gas stove. Take them out.

Place onion into the pan and then add the mixture at step 3 again. Next, simmer them in about 5 minutes and then turn off the gas stove. Finally, sprinkle green onion.
